Saturday Addictions

Wow what a crazy day yesterday! I still cannot believe how much I got done all before 6pm! And on top of that.. I made some really yummy things!

I didn’t mean to be a food addict yesterday it just sort of happened :S

I was at a wedding Friday night s naturally I got up a bit later Saturday morning (okay, late for me means I spelt till 8:30am). On days like this I like to have coffee before my breakfast so I can sort of “wake up” get some work done and then enjoy eating.

After taking care of all my emails, inquires and a couple programs I decided to make one of my favorite shakes: a “Sweet Potato Pie” smoothie. I love this shake simply because of its flavors- the sweet potato just makes it creamy. It has maple syrup, pumpkin pie spice (the best thing in the world!), vanilla and some coconut milk topped with walnuts to make it extra desirable.

So I whipped up make shake and took the dog for an early morning stroll in the sun ๐Ÿ™‚

After I was sufficiently full it was errand time ๐Ÿ˜› not very much fun but I managed to get them all done and be back by 12:30- just in time to be hungry again!

I’ve been craving tuna for about a week now. No idea why, but god I want tuna! So I whipped up some tuna salad (tuna, greek yogurt & spices) and ate it off cut up pepper boats.

It was so good I could have eaten another for a snack, but let’s be honest, that’s a bit too much tuna ๐Ÿ˜›

So then the fun started, we’re currently renovating the basement and my husband decided that Saturday we were going to take as much stuff as we could out to the dump so we can start the ceiling.

As it turns out, manual labor is hard. I really don’t much care for carrying sleeves of carpet, cuppoards, sofas and more fun up two flights of stairs ๐Ÿ˜› So while he took the first load out, I decided I needed a pick me up! Enter my green monster of the day! I took a look in my fridge and used up everything from last week’s groceries. This ended up being: grapes, spinach, kale, cucumber, carrot, ginger and pineapple.

I threw in all in my viatmix and within minutes had a deliciously creamy, energizing smoothie. I personally loved it, though I will admit the color was a bit, umm, odd looking. So while Jackie is used to my random creations he still wrinkled his nose a bit when he saw it (though he tried to hide it). I stand by the fact that it is still better than what he probably had for breakfast (hasbrowns & bacon), we’d see who had more energy!!

I still had some time before he got back.. and a lot of peanuts. So I decided to whip up some peanut butter because I was out!

After a two more truck loads of random crap my muscles were beginning to stiffen- in all honesty, I did a really intense workout Friday before the wedding and was sore before I went to bed. So I was already a bit sore Saturday when we decided to lift everything not glued to the floor.

Since I was getting a bit whiny I decided to make almond butter! Those of you who know me, know I recently got a Vitamix for my birthday. It is the best thing in the entire world and any excuse to blend things will occur.

So I made maple cinnamon almond butter for the first time. I loved it.

I did learn though, that the key to almond butter really is patience. The recipe told me this already, but I don’t listen very well so I had to learn for myself.

But god is it good. Next time I will put a bit more oil into it. Almonds are not as naturally oily as peanuts so my butter wasn’t as smooth as it could of been. Oh well, lesson learned (it’s still freaking amazing!)

After a bit more torturous carrying dinner was made and I realized that a snack would be needed. So chia bread was made! I’ve become addicted to this chia bread as it’s perfect when topped with either peanut butter & jam or some cheese and turkey- perfect snack.

So I was done for the night…

But the next morning my addiction continued. I realized how yummy it would be to have some granola with homemade almond milk. So I set to work soaking almonds. While I did my weekly food prep.

And the end result was obviously magnificent.

So while I had a weekend full of exhaustive labor, I was still able to get in a little quality kitchen time. It appears, ladies & gentlemen, I am a food addict.
