Pumpkin Pie In A Glass

And here we are… the season of pumpkin everything!

Pumpkin seems to be a nationwide thing during fall and I felt left out not contributing ;).

The truth is.. I actually don’t like pumpkin all that much GASP. I know right? I have come to learn that I like pumpkin pie spice far more than the actual pumpkin. And truthfully, pumpkin pie is just downright odd to me. I think it’s the texture?

Anyways, I digress.

And while I may not like pumpkin, I love this shake. Seriously.

You may be wondering how that’s possible since I just announced that I dislike pumpkin! But I do. This shake is beyond tasty, super creamy and can be modified depending on your goals (light or not). And… it is amazing as a post workout meal!

That said, sometimes, instead of a shake, I make mine into a smoothie/ice cream bowl! I love this option if time permits and add on additional toppings to make it extra special. It’s really just dessert 😉

So yea, I love this shake.

 

Pumpkin Pie In A Glass

  • 1/2c canned pumpkin
  • 1tsp cinnamon
  • 1/2tsp nutmeg
  • dash of pumpkin pie spice to your liking
  • 1/4c coconut milk (+ more for drizzle if you’re fancy)
  • Almond milk
  • 1scoop vanilla protein powder
  • 2tbs ground flaxseed
  • 2tbs maple syrup (+more for drizzle!)

Blend it up!

Important Notes:

As I said I truly enjoy this shake… and that means that I top my shake (or smoothie bowl!) with pecan pieces, shredded coconut and more maple syrup. I get beyond excited about this. If you want a less calorie dense option: omit the coconut milk, maple syrup and any toppings.

If you dislike pumpkin…use sweet potato! I do this a lot too depending on what’s in the fridge. It is still beyond tasty and super creamy… just make sure to cook it first!
