Protein Cannoli

If you have time to make a fancy, delicious breakfast this weekend then I have just the recipe for you!

These cannoli are creamy, decadent and best of all.. filled with protein! Personally, I have been using them for a few months as one of my splurges, they just taste that good šŸ˜€

Protein Cannoli Ingredients

That said, there is a quick way to throw them together or a fancy, long way. So depending on your schedule yours may not look perfectly shaped.

Shell

  • 1/4cup oat flour
  • 1/4 egg whites
  • 1/4 cup vanilla whey
  • 2tbs almond milk

Filling

  • 1/2cup low fat ricotta cheese
  • 1/4 cup vanilla protein powder

Toppings

  • Be creative!

Make the shell by whisking together all ingredients. Ensure no clumps remain. Using a big non stick coated pan, fry up four mini pancakes. Do not overcook! Flip them and remove from the pan as soon as possible (before they’re brown). You want them pliable.

Protein Cannoli Batter

Fancy Way: Wrap each pancake around a cannoli mold. Spray and heat the pan until its hot. Press the cannoli into the pan on each side so that it maintains it’s tube shape. You should be able to slip out the mold after it cools.

Lazy Way: Ignore the step above but cook your pancakesĀ slightly longer, so they are still pliable. Not crispy.

Whip together your filling and either spoon directly onto pancake (lazy) and roll into what resembles a tube.Ā Or place into a piping bag and squeeze into cannoli (fancy way– can be done with ziplock baggie).

Now the fun part, garnish with whatever you like! I opted for drizzled almond butter and maple syrup. But natural chia jam, ground nuts or just plain syrup work too.. so many options!
